Homemade Fried Chicken

Ingredients:
1 kg chicken
1 tsp lime juice
1 lemongrass, smashed
2 bay leaves
2 kafir-lime leaves
1/2 turmeric leaves
150 ml water
oil to deep frying

Spices :
4 shallot
2 clove of garlic
4 cm galangal
2 cm ginger
2 cm turmeric
1/2 tsp salt
1/2 tbsp coriander
1/4 pepper

Flour mixture:
250 gr all purpose flour
2 tbsp cornstarch
1/4 tsp pepper
1/4 tsp salt

How To:
  1. Cut chicken into 8 pcs, clean and marinade with lime juice for 5 minutes
  2. Blend spices in food processor until smooth
  3. Put chicken into saucepan. Then add spices, lemongrass, bay leaves, kafir-lime leaves, turmeric leaves.
  4. Pour water into sauce pan and mix them well. Cook chicken in low heat until 30 minutes after that remove from heat and set a side for 5 minutes or until chicken temperature drops.
  5. Heat oil in medium to deep fry the chicken
  6. Prepare flour mixture ingredients in a bowl, blend them well and sift until smooth.
  7. Add chicken one by one in flour mixture and massage chicken with flour until chicken is well coated and shake the chicken to remove the remaining flour, set a side
  8. Deep fry chicken until golden brown, remove from heat and drain on paper towel. Serve with french fries and you favorite sauce.
