1 kg chicken
1 tsp lime juice
1 lemongrass, smashed
2 bay leaves
2 kafir-lime leaves
1/2 turmeric leaves
150 ml water
oil to deep frying
Spices :
4 shallot
2 clove of garlic
4 cm galangal
2 cm ginger
2 cm turmeric
1/2 tsp salt
1/2 tbsp coriander
1/4 pepper
Flour mixture:
250 gr all purpose flour
2 tbsp cornstarch
1/4 tsp pepper
1/4 tsp salt
How To:
- Cut chicken into 8 pcs, clean and marinade with lime juice for 5 minutes
- Blend spices in food processor until smooth
- Put chicken into saucepan. Then add spices, lemongrass, bay leaves, kafir-lime leaves, turmeric leaves.
- Pour water into sauce pan and mix them well. Cook chicken in low heat until 30 minutes after that remove from heat and set a side for 5 minutes or until chicken temperature drops.
- Heat oil in medium to deep fry the chicken
- Prepare flour mixture ingredients in a bowl, blend them well and sift until smooth.
- Add chicken one by one in flour mixture and massage chicken with flour until chicken is well coated and shake the chicken to remove the remaining flour, set a side
- Deep fry chicken until golden brown, remove from heat and drain on paper towel. Serve with french fries and you favorite sauce.
