Crepes Ingredients:
150 gr all-purpose flour
20 gr cornstarch
20 gr cocoa powder
80 gr caster sugar
500 ml milk
30 gr unsalted butter,
malted
4 egg yolks
1/4 tsp salt
1/2 tsp vanilla powder
Whipped Cream
Ingredients:
200 gr whipped powder
400 cc cold water
How To:
- Combine flour, cornstarch, cocoa powder and salt, add half of milk slowly and while stirring constantly. In another bowl, combine egg yolk, caster sugar and last remaining milk, stir until well blended. Then add egg mixture into flour mixture gradually while in stirring until smooth and slippery. Lastly add melted butter and vanilla powder until mix well and strain it to get smooth crepes batter. Wrap and chill overnight or if you do not have much time, just chill 1 hour.
- Heat non stick pan in medium heat, brushed with butter and cook the crepes. One layer crepes using 60-80 ml crepes batter. Cook crepes no longer appears wet on both sides. Place crepes on baking sheet lined with parchment paper and wait until cold completely.
- Meanwhile place whipped powder in a bowl add cold water and mixture with electric mixer until stiff peaks foam.
- Place crepes in serving plate and spread whipped cream per layer until done, using whipped cream on top layer and dust with cocoa powder. chill for 1 hour before serve.
