now I have new blog menu named “try it” and it will share about food product
that I try, such a instant paste, instant noodle, premix cake flour and etc. Maybe I will share how I cook and
serve these food product as well.

In
this dish I use 2 brands of tom yam paste incidentally, they are “Mae Ploy Tom
Yam Paste” and “Adabi Perencah Tom Yam”.

explain the product first
Mae
Ploy Tom Yam Paste
Weight : 50 gr/pack

Ingredients : Lemongrass, soybean oil, sugar, shallot,
hydrolyzed soy protein, dried red chili, water, garlic, galangal, salt, citric
acid, shrimp paste, tamarind, fish sauce, MSG, dried shrimp, kaffir lime peel

Adabi Perencah Tom
Yam

Price : IDR 7,5K /3 pack
Ingredients : Dried
chili, shallot, lemongrass, tamarind, lime juice, MSG, citric acid, sugar and

I
said above that I use 2 brand of tom yam paste incidentally. Why incidentally? That’s
because I added a lot of water and I added another ingredient before the broth
reduced as much as I wanted, so ya my tom yam soup taste became mild or in
Indonesian we say “hambar”.
The
story begins when I want to make a review of mae ploy tom yam paste, I have
prepared some ingredients like: shrimp, fish ball, champingnon mashroom, green
tomato, bird eye chilli and lemongrass, I read the ingredients of the paste and
the directions also, in written direction I have to add 50 gr tom yam paste
with 600 ml boiling water, ok I understand the direction.
At
that time I thought I should to make shrimp broth with head of shrimp first to
make my tom yam seafood better, so I added 900 ml water with the intention, I
will reduce the broth to about 700 ml but the fact after 30 minutes simmering
broth, I suppose the water is about 850 ml I have added all the ingredients and
you know what? my tom yam have no flavor or taste less 😢than I
add a pack of adabi tom yam paste (40 gr) to get back the tom yam flavor or give
the taste, yes! it work and yummy, but I don’t know what is better between mae
ploy and adabi because I only tasted the paste one by one but not as a bowl of tom
yam soup 😢.
How to get tom yam seafood in half way failed
but still yummy ✌
Ingredients
:
900
ml water

gr shrimp
50
gr mae ploy tom yam paste
40
gr adabi perencah tom yam
3
cloves of garlic, smashed
5
shallot, sliced
2
lemongrass, cut diagonally
14
bird eye chilies, smashed
8
fish ball, cut into quarter
6
champingnon, sliced
2
green tomatoes, cut in wedges
2
tbsp fish sauce
1
tbsp lime juice
How
to:
- Peel head and skin of shrimp
- Heat water in low, add head and skin of shrimp and garlic, cook until 30 minutes, remove all stuff of the stock
- Add tom yam paste, fish sauce, lemongrass, bird eye chilies, shallot, champignon, and fish ball, stir
- Add shrimp and green tomato 5 minutes before cook, stir until perfectly cook and last but not least, add lime juice to make more fresh.
My
Opinion:
If
we compare the ingredients, we know that mae ploy tom yam paste have more
complex ingredients and when I have taste the paste, it tastes more sour than
adabi perencah tom yam. I think if you like the tom yam with strong flavor, you
should try tom yam paste from mae ploy but if you like the mild ones, you
should try tom yam paste from adabi. Which one do I like ? I like tom yam paste
with the strong flavor a.k.a medok (Indonesian dialect) or you can combine
these 2 tom yam paste as well.
The
lesson I learned from this experience was that if I wanted to know how good a
food product was, I have to follow the directions and the suggestions of the
product of course. I will do a proper review of mae ploy tom yam paste &
perencah tom yam adabi soon.
