Gulai Pangek Masin Kapalo Lauak

Ugly But Tasty

Morning everyone… Today I am sharing another typical dish of Minang cuisine named "Gulai Pangek Masin Kapalo lauak", kapalo lauak means fish head. The broth from fish head will make your dish more tasty like you cook with MSG but in real not. Main ingredients in this recipe are red snapper and coconut milk. In the original recipe used holy basil but I can’t find this around the traditional market in Batam. Holy basil is one of the important ingredints in minang cuisine to make fish gulai more aromatic.

The taste of pangek masin is creamy, spicy, savory, sour and fresh. It’s perfect to eat with warm rice and for side dish I make boiled  chayote wedges and chili sambal.

Ingredients:

700 gr half of red snapper head
200 ml coconut milk
200 ml water
7 whole bird eye chili, smashed
2 kefir lime leaves
3 asam kandis
2 Indonesian bay leaf
1 lemongrass, smashed
half of turmeric leaf, smashed and tied in knot

Paste:

5 bird eye chili
3 red chili
3 shallot
2 garlic cloves
2 candlenut
3 cm turmeric
3 cm ginger
1 ½ tsp salt
½ tsp pepper
½ tsp sugar

How To:

  1. Blend all of paste ingredients until smooth. Saute paste, kefir lime leaf, asam kandis, bay leaf, turmeric leaf and lemongrass until aromatic.
  2. Add fish and turn over to the other side after 3 minutes and wait 3 minutes more, add water and turn heat into low to make the fish broth more out. Stir time to time in slow and don’t break the fish.
  3. When the fish in half way cook, add coconut milk and smashed bird eye chili, stir slowly to keep the coconut milk consistency won’t change to became oily.
  4. Taste the broth and seasoning, if you feel tasty and the fish change to become soft , it means your pangek masin is done.

 
Chili Sambal and Boiled Chayote Wedges

Side dish:

Boiled chayote wedges as side dish. In this recipe I used 2 whole chayote.



Salted Fermented Shrimp
Sambal

in this sambal recipe I used salted fermented shrimp, it feels like half way of terasi or belacan, they are fermented with salt and shrimp only. you can find it in korean market or chinese market.

Ingredients:

11 red chili
6 bird eye chili
3 shallot
2 garlic cloves
½ tomato
1 ½ tsp sugar
1 tbsp salted fermented shrimp
½ tsp salt
cooking oil

How to:

Blend sambal ingredients with food processor or with mortar and pestle will be nice , saute in a pan until aromatic and thick.
